From the kitchen, since my daughter was here with the babies and my husband was gone, there was plenty of chick food that happened.
She enjoyed the leftovers of the chicken pot pie we had.
There was also a request for mini pizzas that we dressed up to our individual preferences.
And since there wasn't a carnivorous male in sight, the Uber-ultimate chick food.....curry chicken salad on mini-croissants. Don't tell anybody, but my daughter had....more than 1. It's really good stuff.
On to the orange scones. This is a recipe I've made off and on for several years. Most recently, I made it when I was at my daughter's house, when the babies were first born. I doubled it and put what we didn't eat for breakfast right in the freezer. They freeze beautifully. When Bryce and his wife were here for his birthday, and the morning plans changed at the last minute....can you imagine that??? My whole posterity is laughing right now because they know this is the way of my family, led by their fly-by-the-seat-of-his-pants-it'll-be-ok-why-are-you-so-upset, dad. Sorry, I got distracted by my husband trying to teach me to be "flexible." Anyway, when plans change, you can pull these out of the freezer and warm them in the microwave, and it's just like they came out of the oven. The oats give them a little heft and the orange flavor is something we really enjoy. I found the recipe years ago in a little recipe book next to the supermarket checkout. I'm dating myself, but back in the day they had all kinds of those, changing monthly with seasonal recipes. They were usually put out by a baking company like Pillsbury. Make these. They're yummy.
Orange Scones
-
1 1/4 cups all-purpose flour
-
1/2 cup quick-cooking oats
-
3 Tablespoons sugar
-
2 teaspoons baking powder
-
2 teaspoons grated orange zest
-
1/4 teaspoon salt
-
1/3 cup firm butter or margarine
-
1 egg, beaten
-
4-6 Tablespoons half-and-half
-
1 Tablespoon orange juice
-
1 Tablespoon sugar
Heat oven to 400°F. In medium bowl, mix flour, oats, 3 tablespoons sugar, the baking powder, orange peel and salt. Cut in butter, using pastry blender or pulling 2 table knives through ingredients in opposite directions, until mixture looks like fine crumbs. Stir in egg and just enough half-and-half so dough leaves side of bowl.
Place dough on lightly floured surface. Knead lightly 10 times. On ungreased cookie sheet, pat or roll into 7-inch circle, 1/2 inch thick. Cut into 6 wedges with sharp knife that has been dipped in flour, but do not separate wedges. Brush with orange juice; sprinkle with 1 tablespoon sugar.
Bake 10 to 14 minutes or until golden brown. Immediately remove from cookie sheet; carefully separate wedges. Serve warm. Makes a dozen.
looks delicious! I should get pregnant with twins. Then I'll come live over at your place for a while, eh?
