It's a special day today for this boy.
He's 4 today! I have long thought that 4 is the magic age for boys. They are so excited about everything around them, and they are able to be reasoned with to a certain extent. My boys were so fun at 4...taking a nostalgic moment..................................OK. Love this boy.

With the cooler weather, it's so nice to get back into the soup mode. Soup is just one of those, to use one of Isaac's favorite words, "cozy" things that goes with fall and winter. I have made this soup for my family for literally years. I found originally it in an older Mormon Family Cookbook and if you ask my kids about it, you'll get differing opinions, based mostly on whether they like tomatoes or not. I have a few kids who are combatively anti-tomato, and they won't touch this with a 39 1/2 foot pole. That said, some of my kids will call and request this in advance when they're coming to visit, and then will hide the leftovers in the fridge so they can eat the rest themselves. It's also a great food storage recipe because it uses all shelf-stable ingredients. I always double the recipe so it will use a quart of my bottled tomato juice, and because it make the kids who want to hide the leftovers happy. So, if you like tomatoes, you will probably like this soup. If not, this is probably one you won't be pinning.
Cream of Tomato Soup
- 1/4 cup (1/2 stick) butter
- 1/3 cup flour
- 2 cups water
- 1/4 teaspoon dried basil
- 1/4 teaspoon onion salt
- 1/4 teaspoon celery salt
- Pinch of garlic salt
- Pinch of white pepper
- 2/3 cup instant non-fat dry milk
- 2 cups tomato juice
In a saucepan, melt butter; add flour and blend. Add 1 1/2 cups water; stir, on medium heat, until thickened. Reduce heat to simmer. Add seasonings; cover and cook 5 minutes.
Blend non-fat dry milk with remaining water; stir into thickened mixture. Increase heat to medium; add tomato juice VERY slowly, stirring well. If you add it too fast to the milk mixture, the soup will look curdled. Serve with cracker or grilled cheese sandwiches. Makes about 2 quarts.
