With the weather as warm as it's been, I've been looking for easy things for dinner. This recipe is one I had pinned on my "sandwiches" Pinterest board and it was good. I'll be honest here, even with using scratch biscuits instead of the pre-made refrigerated ones, I think I would have preferred this more on a roll. Don't get me wrong it was good. I'm just thinking the roll would have been better. I found the recipe here, and hey, check out that home-grown lettuce in that salad there.
Honey Ham Biscuit Sliders
1 can Grands Jr Butter Tasting Biscuits (10 count) I made a batch of biscuits from the Betty Crocker cookbook as a substitute for this. I rolled out the dough and using a fairly large biscuit cutter, made 12 biscuits. I used 2 biscuits per sandwich.
1/2 lb deli ham, shaved
1 cup shredded swiss cheese ( I used some shredded Colby-Jack cheese)
1/4 cup honey mustard dressing (I used this recipe....so good, really!)
1 Tbsp butter, melted
2 Tbsp honey
Preheat oven to 400.
Lightly spray a 9-inch pan with cooking spray. Set aside.
Separate each biscuits into two layers. Spread each layer with honey mustard and top with swiss cheese. Place half of the biscuits, cheese side up, in the bottom of prepared pan. Top with ham. Top ham with remaining biscuits, cheese side down. Brush biscuit tops with melted butter.
Bake 12-15 minutes, until golden brown. Heat honey in microwave for 20 seconds. Brush biscuit tops with warm honey. Serve immediately.
