It's asparagus season here for us. I happen to really enjoy asparagus. We even tried to plant some in the garden when we first moved here, but the voles ate it up, despite us putting chicken wire under the planter. Pretty sad about that. We like it several different ways...Parmesan roasted , in Wild Rice Salad, and our favorite Sugared Asparagus. We also like it in this recipe. It's one I've had forever in my "casseroles" binder, which is where I put the quiche recipes. We had it in honor of Pi Day this past week, even though it's crustless. It still bakes in a pie pan, so I'm calling it pie. My husband made a special trip home for lunch to eat the leftovers. What was left after that, I wrapped up and froze to take to the college kids on the next trip down.
Ham & Asparagus Quiche
- 1 cup buttermilk baking mix (like Bisquick. I used the heart-healthy version and it worked just fine.)
- 3/4 cup milk
- 3 eggs
- 1 bunch fresh asparagus, cut into bite sized pieces**
- 2 cups diced, cooked ham
- 1 cup shredded Swiss cheese
- 1 cup white Cheddar cheese (I just used regular Cheddar. In fact, you can use whatever nice melting cheese you have....Jack, Colby-Jack, etc.)
- 1/2 cup onion, diced**
- 1/4 teaspoon ground pepper
- 1/8 teaspoon salt
- Dash cayenne pepper (I used a few crushed red pepper flakes)
Combine baking mix, milk and eggs. Stir in remaining ingredients. Pour into a greased 9" pie plate. Bake at 375° for 30-35 minutes. You may need to lay a piece of aluminum foil over the top for the last 10 minutes to prevent over-browning.
**Note--When I've made this in the past, I have found that the veggies are more tender-crisp than all the way done if I follow the recipe exactly as written. I will usually put the asparagus and onion in a bowl together, cover them and microwave them for about 2 1/2 minutes to jump-start the cooking process before I mix them with the rest of the ingredients. If you like slightly crunchy vegetables, then just go with the recipe as written.
