One nice thing about not having to do quite so much of what I call "survival" canning...basic things like peaches, pears and applesauce for us, is that you have a little more leeway to try some out-of-the ordinary things.
Last week my husband and I did some apple pie filling. I've done this once before, but it's been a few years. We have an interesting apple tree that has grafted sections of 4 different apple types. So theoretically, we have 1/4 of the tree growing Granny Smiths, 1/4 growing Macintosh, 1/4 growing a tart summer apple and 1/4 growing something we've never seen, as in it's never produced anything. It's always a bit of a guessing game as to what we might get.
We took some of the Macintosh and the summer apple for this project. My husband likes apple pie so he was pretty willing to go to work peeling them with this handy-dandy crank peeler that worked better on some apples than others.
He peeled and I loaded the jars and made the syrup that went over the top of them. We're hoping it tastes as good as it looks in the jars, and I can't deny that we were feeling pretty self-sufficient and homestead-y taking the apples from our own tree and doing something with them. Who knows? Maybe those trendy chickens are next!
Chickens are so last year. This year it's emus. You should get a nice flock of laying emus.
