There are a few meals that my kids will ask for when they come to visit and interestingly, this is one of them...and it is really a glorified cheese sandwich. The recipe comes from a very old cookbook written by Peg Bracken called I Hate to Cook. I imagine it is out of print now, but this is a really tasty cheese sandwich. I made is last week when just the three of us were here. The leftovers didn't last long in the fridge.
Laramie Loaf Serves 4-6, depending on who they are :)
Split a long loaf of French bread. On the bottom side spread a mixture of:
- 2 1/2 cup grated yellow cheese (I've used Cheddar or Colby-Jack)
- 3 oz. softened cream cheese
- 1/4 cup mayonnaise
- 2 teaspoons prepared mustard
- 1 1/2 teaspoons Worcestershire sauce
On top of this mixture, sprinkle:
- 4 chopped green onions
- 2 thinly sliced tomatoes
- 10 slices of crisp, crumbled bacon
Put the top on and wrap the whole sandwich loosely in foil, leaving the top open so it won't steam. Bake at 350 degrees for 20-25 minutes. Cut and serve. The cheese oozes out a little bit and you can sort of smear it around on the thick pices of French bread.
One of our favorites! I usually make it open-faced, and broil it.
