I will start out by saying that this is not The Girl's favorite meal. She is anti-bean and not a big fan of Mexican food in general. When I make this, she'll usually put a quesadilla together with a tortilla and cheese. But it works up quickly for lunch or dinner and the boys like it. We usually get a little variety in the way people assemble them. Some might opt for just the soft tortilla, others just the crunchy, but the Double Decker part of the recipe means using both, with a slathering of refried beans to stick them together. (And homemade beans are the best....and totally easy to do...and cheap.) I need to get that recipe on here, too. This is not a terribly exact recipe, but is easily adapted to however many you have at the table.
Double Decker Tacos
- A package of flour tortillas (the soft taco size)
- A package of crunchy taco shells
- 1 can refried beans, any kind or flavor
- 1 pound hamburger
- 1 envelope taco seasoning
- Any taco toppings you like: grated cheese, sour cream, salsa, chopped tomatoes, onions, guacamole, etc.
Brown hamburger in a skillet. Drain. Add taco seasoning and water according to seasoning envelope directions. Warm refried beans. Assemble by spreading some beans on the flour tortilla, then put the cruchy taco shell in the middle of the flour tortilla and bring the sides of the tortilla up along the taco shell. Add meat and other toppings as desired. Serves 8-10, depending on how many tortillas and taco shells you have.

What a great idea! Meg only loves hard shells and dh and I prefer the soft so I always have both on hand. I'll have to try this. And yes, I need your refried bean recipe. Is it on POM?
