Happy Mother's Day to one and all! Today's recipe is something you could serve for a Mother's Day breakfast, if you wanted. Strawberries are in season now and I've pulled out my stack of "to try" recipes that have strawberries in them. We've had these twice in the last month for breakfast. They are delicious. Muffins are The Girl's choice of breakfast food, right after Lucky Charms.
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 teaspoon vanilla
- 1 1/2 cups chopped strawberries
- 3 teaspoons sugar
- 1/2 teaspoon cinnamon
Cream butter and sugar. Add eggs and mix well. Mix together the flour, baking powder and salt in a separate bowl. Add it to the sugar mixture alternately with the milk and vanilla. Gently stir in strawberries. Don't overmix.
Spoon batter into greased muffin cups (or use paper liners). Combine the sugar and cinnamon and sprinkle over muffins. Bake at 4000 for 20-25 minutes (in my oven it takes about 18 minutes). Makes 1 dozen.
