Yes, even while I'm gone, I am pulling the techno fake out and have a couple of blog posts put aside for viewing. And wouldn't you know that this one would deal again with that beloved of all garden vegetables, the zucchini?
We had a couple of torpedoes this week and I made another batch of bread with them. This is an orange variation that we like, although the Princess is a bit of a purist when it comes to her zucchini bread. She likes the plain, traditional version. But she's at Girl's Camp and isn't here to whine, much to College Boy's dismay....dang...nobody to bug.
Zucchini anything qualifies as Mom Food because it is a creative way to get something green into her children.
Orange Zucchini Bread
Makes 2, 8" loaves and freezes well
Mix together:
- 4 eggs
- 1 1/2 cups granulated sugar
- 3/4 cup vegetable or canola oil
- 2/3 cup orange juice
- 2 cups shredded zucchini
Mix together and add to above mixture:
- 3 1/4 cups flour
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons grated orange peel
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoons ground cloves
- 1/2 cup chopped nuts, optional (I leave these out because I have kids who are allergic)
Heat oven to 350 degrees. Pour batter into greased loaf pans. Bake for 45-55 minutes. Let cool in pans 10-15 minutes, then remove from pans.
If desired, you can make a glaze with:
1 cup powdered sugar
2-3 Tablespoons orange juice and pour over warm loaves that have been removed from pan.
Wrap bread tightly and store in fridge.
That sounds pretty good but I prefer the regular stuff too.
Have you ever made a lasagna with it? You use it in place of the noodles.
